- Contributes to maximizing the overall Food & Beverage department profit.

- Control and analyses on an on-going basis the following:

- Quality levels of production and presentation.

- Guest satisfaction.

- Merchandising and Marketing.

- Operating food cost.

- Cleanliness, sanitation and also hygiene.
