- 5 years + of experience in the kitchen of respectable hotels and restaurants
- Excellent communication skills in both Thai and English
- Excellent kitchen management skill and experience
- Knowledgeable in Western and European food
- Cooperative and willing to work towards the company goals
- Oversee all day-to-day kitchen operations
- Maintain highest professional food quality, taste and presentation
- Carry out menu development, recipe creation, costing and ingredient purchase specifications
- Knowledge of and passion for ingredients
- Enthusiasm in dealing with local farmers to obtain quality produce
- Ability to recognize both desirable and undesirable characteristics of ingredients/produce, and ability to apply appropriate methods/techniques which would result in a positive outcome
- Passion in experimenting with different cooking processes/methods with different variables to achieve desirable and the best results
Knowledge in food preservation i.e. pickling, fermenting, curing and canning with consumers- heath & safety in mind
- Ability to recognize value in off-cuts/trimming of produce and being proactive in making use of them so that maximum yields are achieved
- Vigilant and observant of when freshness/quality of produce in stock start to decline and find solutions to minimize wastage
- Environmentally concerned and zero-waste mindset
- Monitor food budget for the department and be responsible for food ordering, storing, preparation, production, cooking and service to the restaurant
- Great leadership, setting good examples team members as well as have the ability to teach/train the team
- Excellent problem solving skills
