Making sure all bar services run without a hitch, responsible for managing stock levels, figuring out staff rotas, organize staff trainings.
PRIMARY RESPONSIBILITIES
- To direct, control and organize all staff within the direct span of control and to ensure that the required standards are achieved and maintained.
- Creating and regularly updating the drinks menu and responsible for designing signature drinks.
- Managing and checking stock levels and cost control.
- Setup used bottles checking system (anti-cheat system).
- Par check (error margin <15%)
- Supplier relations.
- Daily purchase spirits, beer, wine, NA beverages, and other bar consumables.
- To ensure all deliveries are checked in correctly with the store keeper and that all relevant delivery dockets/ invoices are correct.
- To provide all relevant bar training, sales techniques (and English language) and motivate new staff in methods and procedures.
- Responsible for creating staff rotas which will provide adequate cover in the most effective manner.
- Enforcing hygiene, health and safety rules.
- Set good example for the staff with regard to punctuality, attendance, attitude and hygiene.
- To work with Human Resources regarding recruitment needs, and to carry out interviews as required.
- Complete monthly competence and skills checklists.
- To hold regular departmental meetings.
- To advise staff of unavailability, special promotions, information relation to drinks, wines, cocktails etc., and any other relevant information in order to ensure the efficient operation of the Bar.
- To maintain and/or implement new efficient and effective work methods and systems.
