รายละเอียดงาน
1. Supervise the function of all stewarding department staff, facilities, operation and cost
2. Control, on and on-going basis, the following:
- Quality level of product and service
- Guest satisfaction
- Operating cost
- Sanitation, cleanliness and hygiene
3. Co- ordinate with the Executive Chef in establishing minimum and maximum operating par stock and supplies. Approve storeroom requisition.
4. Attend and contribute the daily chef- s meeting or will designate a supervisor in his absence.
5. Keep up-to-date records which include, but are not limited to, the following
- Specifications
- Breakage
- Par stock
6. Implement hotel sanitation check list and take corrective action as required
7. Ensure cleanliness of all facilities and equipment
8. Schedule preventative maintenance work and co- ordinate with engineering
9. Perform related duties and special projects as assigned.
10. Organise all cleaning at any assigned kitchen and outlet
11. Collect and deliver garbage from all food and beverage sections.
12. Carry out any alternative stewarding duties as may be assigned by Executive Sous-Chef or Executive Chef
13. Assist in preparing and checking equipment for kitchen or outlet mise-en-place.
14. Attend all such as staff meeting as required.
15. Responsible for the correct us of detergents and other chemicals
16. Responsible of reporting any fire or health hazards to immediate supervisor or any other appropriate department head.
17. Be aware of correct functioning of dishwashing machine
18. Prepares a 100% correct monthly inventory
