? Certificate or Diploma or Bachelor degree in Hotel Management or Culinary.
? A minimum of 3 years previous experience as a Chef De Partie in a five-star hotel or restaurant with a focus on Thai, Indo-Chine, or Japanese Cuisine
? Possess good English communication skills.
? Passionate, committed, creative, flexible and a team player with high energy level
? Ability to perform duties under pressure.
? Knowledge of best cooking practises
? Computer literate and HACCP knowledge
Responsible to oversee a section of the kitchen, be it pastry, butchery, fish, sauces, vegetables and so on. Ensure that dishes are prepared and cooked according to the specific restaurant standards. Managing the development and supervision of the Commis Chefs on the section, ensuring they are fully trained and understand their duties.
? Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist.
? Continually strive to improve food preparation and presentations
? Ensure the cleanliness and maintenance of all work areas, utensils, and equipment
? Follow kitchen policies, procedures and service standards
? Follow all safety and sanitation policies when handling food and beverage
? Prepare special meals or substitute items
? Ensure proper portion, arrangement, and food garnish
? Monitor the quality and quantity of food that is prepared
? Ensure the quality of the food items. Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist
? Ensure uniform and personal appearance are clean and professional; maintain confidentiality of proprietary information; protect company assets
? Develop and maintain positive working relationships with others; support team to reach common goals; listen and respond appropriately to the concerns of other employees
? Perform other reasonable job duties as & when required
