1. Takes charge of handling all supervisory and operational matters relating to the beverage section
2. Assists the food & Beverage Manager in supervision and execution of entire beverage production for Bar, Restaurants, Lobby Lounge, In-Room Dining subordinate supervisors.
3. To assist & check the quality and preparation of all beverage products and to ensure that they are correctly received, stored, served and prepared according to recipe.
5 To monitor and maintain high standard of quality and speedy service.
6. To strictly adhere to the opening and closing procedures established for the Department.
7. Assists and oversees training matters for all above mentioned food and beverage sections.
8. Coordination of all utensils for day to day operation with stewarding department.
9. Assistance, supervision and control of sanitation and cleanliness of all food and beverage sections including storage areas, back of the house and refrigerators on daily basis
10. To check and receive all food and beverage supply, checks par stock and storage, refills ice cabinets and coordinates trash with stewarding.
11.To attend all training and coaching sessions for beverage related issues
such as:
- wine knowledge, wine list, storage, handling and service of wine & Champagne
- drink list as established and approved for the outlets
- cocktail recipes with preparation details and picture, including non-alcoholic
- introduction on all other drinks such as spirits, whiskey, eau de vie, beer, soft drinks, juices etc.
- introduction and handling on all equipment & utensils used at the bar and restaurant
