?Assists the steward to managing all back of the house operations, excluding the actual food production.
?Checks condition of dishwashing machine and its detergent dispenser and rinse additive injector makes hourly supervision of all kitchen areas.
?Makes sure the kitchen crockery and other equipment is organized on the proper place or shelves
?Familiarizes with the rules and regulations of the Food Handling and hygiene standard of the hotel
?Checks the daily function sheet and makes sure that the other kitchen equipment being prepared.
?Supervises the steward in maintaining cleanliness, orderliness and sanitation of kitchen areas and other areas of responsibilities during his shift.
?Communicates effectively with steward staff and other section head.
?Minimizes the wastage of all operating supplies, in particular chemical.
?Controls and minimizes breakages and to have a breakage report system weekly
?Conducts an OE inventory every quarter
?Conducts daily briefing for steward staff on his shift in absence of the Stewarding.
?Assists the steward on his shift for special cleaning program or big event.
?Provides training for the steward on his shift effectively in the area of weakness.
