? Takes charge of handling all supervisory and operational matters relating to the beverage section.
? Assist the Food & Beverage Manager in supervision and execution of entire beverage production for all dispense bars, wine cellar, restaurant, lobby lounge, in-room dining and outside catering through subordinate supervisors.
? To assist and check the quality and preparation of all beverages products and to ensure that they are correctly received, stored, served and prepared according to recipe.
? To monitor and maintain high standard of quality and speedy service.
? To strictly adhere to the opening and closing procedures established for the Department.
? Assists and oversees training matter for all above mentioned beverage sections.
? Coordination of all utensils for day to day operation with stewarding department.
? Assist, supervise and control sanitation and cleanliness of all beverages sections, including in-house storage areas, back of house and refrigerators on daily basis.
? To check and receive all beverage supply, check par stock and storage, refill ice cabinets and coordinates trash with stewarding.
? To attend all training and coaching sessions for beverage related issues such as:
o Wine knowledge, wine list, storage, handling and service of wine & champagne
o Drink list as established and approved for the outlets
o Cocktail recipes with preparation details and picture, including non-alcoholic
o Introduction on all other drinks such as spirits, whisky, eau de vie, beer, soft drinks juices, etc.
o Introduction and handling on all equipment and utensils used at the bar
