1. Responsible for the administration and operation of the assigned section Kitchen.
2. Responsible for market awareness in terms of trends, new systems and practices in food preparation and presentation.
3. Responsible for supervising the assigned section Kitchen staff, in the performance of their work.
4. Responsible for providing functional assistance to the assigned section Kitchen staff during operation.
5. Responsible for scheduling sufficient manpower to suit volume of business.
6. Responsible for maintaining high sanitation standard in the assigned sectiont Kitchen Storage.
7. Responsible for providing sufficient equipment, in good working order to operate the Kitchen.
8. Responsible for providing sufficient fresh food supplies and operating supplies to operate the Hot Kitchen.
9. Controls &analyzes on an on-going basis the following :
a. Quality levels of production & preparation.
b. Guests & staff satisfaction.
c. Merchandising & Marketing.
d. Operating expenses, payroll and related costs and food costs.
e. Sanitation, hygiene & cleanliness.
10. Responsible for the effective implementation of the Hotel?s policies, procedures, rules and regulation.
