1.To supervise his station.
2.To take order and promote special items to guests.
3.To perform specialised skills such as carving and slicing.
4.To be responsible for own station mise-en-place.
5.To assign side duties to his FBSA III/II.
6.To be responsible for the recommendation and sale of wines (when Wine Sommelier is busy or on off day).
7.To be familiar with the menu and be able to train and guide his subordinates.
8.To relay any guest complaints to Manager.
9.To attend staff meetings/briefings.
10.To be responsible for billings.
11.To ensure that the guests are satisfied.
