-วางแผนการทำงานของแผนก การเตรียมพร้อมเกี่ยวอุปกรณ์ ภาชนะที่จะต้องใช้ในงาน ต่างๆ เช่นการประชุม งานเลี้ยง
-จัดทำแผนกการทำความสะอาดครัว พื้นที่ต่างๆ ที่อยู่ในความรับผิดชอบประจำสัปดาห์ ประจำเดืออน ประจำปี
