To accountable for the day-to- day operation, quality control, cost up-keep and an efficient running of the Chinese, Thai and Western kitchens.
- Ensure that high efficiency and required standard of food production in all categories are achieved by good delegation and proper supervision
- Oversee and supervise all kitchen staff. Plan and supervise in rostering, training, supervising and problem solving as they are parts and parcels of the daily routine
- Manage Kitchen stocks and inventory
- Ensure Kitchen staff are working safely and hygienically at all times
- Ensure no food borne illnesses in your sections. All food provided to guests must have good nutrition and in conditions of absolute sanitation.
- Assist/Report the Food and Beverage Director as required
