o An understanding of both a la carte and group cooking in several areas of cooking
o Prior experience as Commis I or a Demi Chef de Partie at 5 star restaurants
o Strong knowledge cooking Italian and western cuisines
o Strong understanding of HACCP
o Experience assisting Chef de Parties to ensure the required production level of food is consistent with the requirements of the restaurant
o A basic command of the English language
