1. Directly responsible for the restaurants area, ensuring a smooth running, profitable operation within
the framework of the hotel.
2. Responsible to maintain the overall welfare of our employees by providing them with the training and
resources to take care of our guests.
3. Achieve departmental budget goals by maintaining profits through increased sales revenue and the
efficient cost expenditure.
4. To be responsible for the monthly department profit & loss statement.
5. Preparation of the yearly department budget by using history and forecasting techniques to develop an
aggressive budget that reflects the outlets achievable capabilities.
6. Accurately forecast business demands to ensure efficient staffing & food production.
7. To ensure the efficient scheduling of management and employees.
8. To be responsible for the accurate supervision of the employee time control and payroll systems by
working with accounting and human resources department.
9. To supervise the completion and critique of the wage progress report on a weekly basis.
10. To be responsible for all accounting and billing procedures in the outlets.
11. To ensure the awareness and enforcement of all company SOPs & property LSOPs.
12. Enforce operational standards that are periodically reviewed and updated.
13. To be aware of all company guest incentive programs and the correct accounting procedures pertaining
to them.
14. To develop and execute plans and actions for the marketing of the outlet.
15. To be aware of competitors in the market and complete a competition analysis on a quarterly basis.
16. To develop and implement employee and supervisor training plans on a quarterly basis in conjunction
with human resources department.
17. To implement a departmental daily training program.
18. To be responsible for the execution of all employee reviews and appraisals in a professional and timely
manner.
19. To be responsible for all aspects of employee management including hiring and discipline in
conjunction with the food and beverage manager.
20. To train subordinate managers and supervisors in effective ?coaching and counselling? and the correct
process of progressive discipline.
21. To conduct an effective monthly employee meeting with minutes and P&A forwarded to the general
manager, food and beverage manager and human resources manager.
22. To practice ?open door? policy to all employees.
23. Periodically plan outside employee activity to promote teamwork.
24. To be responsible for maintaining outlet safety and sanitation standards at all times.
25. Enforce company sanitation checklist by having all restaurants inspected on a monthly basis.
26. To be responsible for asset management of all outlet property and facilities.
27. Conduct a preventative maintenance inspection on a monthly basis.
28. Promote positive inter-departmental relations through candid communication and cooperation.
29. To respond to guest inquiries or concerns within 24 hours in what is deemed the appropriate manner.
30. Enforce company?s principals of hospitality at all times.
31. Perform any reasonable request made of management which is not life threatening or against the law.
32. Above all, to lead by example through a ?hands on? approach to motivate our employees to excel.
