? In cooperation with the Executive Chef, within the limits of established policies, procedure and F/B recipes oversee and direct all aspects of Kitchens L'Appart.
? Supervise the function of all Kitchen employees, facilities, and cost, hence contributing to maximizing the overall F/B department profit and Staff Cafeteria.
? To organize and control the day to day operation of the conference and catering facilities of the Hotel.
? To ensure that constant and updated communications are maintained and that all relevant departments are aware of their responsibilities in association with the function activities on a daily basis.
? To be responsible for smooth, efficient and courteous service to the guest during functions.
? Ensure all areas are adequately staffed to service the anticipated business at an acceptable standard
? To ensure that all conference and catering buffets are set up as per event orders.
? Control and analyze on an on-going basis as following:
? Quality levels of production and presentation.
? Guest satisfaction.
? Merchandising and Marketing.
? Operating food cost.
? Cleanliness, sanitation, hygiene.
? Gives out supplies and material to kitchen personnel as requested
