- Deputizes the Chef
Sommelier on his absence
- Supervises and assists
the set up of the restaurant, ensuring that mise en place levels are kept to
the expected standard (quantity and quality) and stock available
- Ensures that the
standards of beverage services are maintained.
- Ensures that wine
lists and beverage list are consistently updated
- Communicates clearly
and effectively with the service team
and sommelier team members
- Makes recommendations
for guests, matching food dishes to appropriate wines
- Serves and ensures
efficiency and accuracy in service delivery
- Guides and directs
service team to ensure productivity meets standards
- Assists with the
ordering and receiving of beverages to provide accurate levels of stock
- Meets suppliers with
Chef Sommelier
- Constantly strives to
develop and increase sales in order to increase profitability
