1. Assist Director of Culinary in establishing and maintaining the highest standard of service and generate profits in accordance with the establishment budget within the kitchen
2. Liaise and coordinate with other outlets concerned in regards to the requirements of each function
3. Constantly check quality and quantity of all meat, fish and seafood and distribute all to their kitchen with Butcher transfer properly made. Check all kitchens whether enough meat, fish or seafood is on mis-en-place or not
4. Prepare mis-en-place lists for upcoming banquet functions
5. Communicate to evening staff and give assignments. Responsible for butchery equipment, utensils and their maintenance as well especially for hygiene and cleanliness of walk-in refrigerators, table tops and cutting boards
6. Inspect storerooms, refrigerators and freezers daily to ensure no wastage
7. Ensure orientation and introduction of staff occurs prior to the actual commencement of work as far as practicable, using the Challenge Hospitality approved program
8. Demonstrate working knowledge of all tasks within your area of responsibility
9. Co-operate with other sections and departments
10. Conduct staff appraisals, counseling and discipline using corporate guidelines
11. Ensure all staff are in proper uniform, grooming and proper discipline team spirit to perform their duties
