To support the Cost Controller in all his / her duties according to the procedures, standards and quality management.
Responsibilities
- Ensures that all goods movements in / out the hotel and stores are accounted for and properly supported.
- Performs cost estimation, tracking, analysis, and reporting.
- Monitors project activities and identify differences with forecasts.
- Implements corrective measures when the need arises.
- Timely compilation of reports.
- Reviews menu calculates recipe costs and prepares F&B budget.
- Prepares cost control in all aspects of F&B services in achieving profitability goals.
- Conducts physical stock take - kitchen; chillers, freezers, and storage areas for over-stocking and or slow-moving items and submit report.
- Checks on site month-end activity declaration & inventories, storage area inventories and informs the - Cost Controller for any discrepancies detected.
- Ensures that any goods coming into the hotel have been properly ordered and met the specification (in quantity and quality).
- Ensures that all goods received in the hotel are accounted for and supported.
- Examines both quality and quantity of goods received in coordination with related department before accepting the delivery.
- Ensures that goods are promptly moved to the store or concerned department once received. The final receiver of the goods must sign the receiving record.
- Closely monitors with Purchaser for all pending or partial deliveries.
- Takes responsibility for recording and distributing reports as per hotel policies and procedures, such as duly signed individual receiving record, receiving report, etc.
- Coordinates with the purchasing department regarding delivery issues.
- Maintains a good relationship with suppliers and other departments.
