The Food Safety & Hygiene Officer responsible for ensuring compliance with food safety, hygiene, and sanitation standards throughout all food production and service operations. The role monitors HACCP implementation, local regulatory requirements, and hotel brand standards to maintain a safe, hygienic, and compliant environment across kitchens, stewarding, food storage, and receiving areas. The officer also supports food safety training, internal audits, continuous improvement initiatives, and promotes a strong food safety culture within the hotel.________________________________________
Duties & Responsibilities
1. Implement, monitor, and maintain the HACCP and Food Safety Management System (FSMS).
2. Conduct daily hygiene and sanitation inspections across kitchens, stewarding, food storage, and receiving areas.
3. Verify food receiving, storage, preparation, holding, and service practices to ensure compliance with food safety standards.
4. Monitor food, equipment, and storage temperatures, including calibration of thermometers and measuring devices.
5. Ensure compliance with FIFO, FEFO, food labeling, traceability, and expiry date requirements.
6. Monitor cleaning, sanitation, and the safe use of cleaning chemicals in accordance with established procedures.
7. Coordinate and monitor the pest control program with appointed contractors and relevant departments.
8. Maintain accurate HACCP documentation, temperature logs, cleaning records, and other food safety records.
9. Conduct internal hygiene and food safety audits, and follow up on corrective and preventive actions (CAPA).
10. Deliver food safety and hygiene training and coaching to Culinary and Food & Beverage associates.
11. Prepare kitchens and related areas for health authority inspections, brand audits, and internal audits.
12. Investigate food safety incidents, identify root causes, and recommend corrective actions.
13. Support sustainability initiatives, food waste reduction, and environmental hygiene programs.
14. Perform any other duties assigned by management.

คุณสมบัติผู้สมัคร
1. Bachelor's Degree in Food Science, Food Technology, Hospitality Management, or a related field.
2. Minimum 1?2 years of experience in food safety, hygiene, or quality assurance, preferably in a 4?5-star hotel or hospitality industry.
3. HACCP certification is preferred.
4. Knowledge of food safety regulations, sanitation standards, and HACCP principles.
5. Good communication and interpersonal skills.
6. Proficient in Microsoft Office applications (Word, Excel, PowerPoint).
7. Ability to conduct inspections, training, and internal audits.
